Winter Raw Veggie Sandwich

The other day, I ordered a fresh veggie sandwich at a restaurant and it mainly had lettuce, cucumbers and tomatoes in it and while very delicious, it wasn’t comforting at all and felt too “cold” for the winters. I was looking for something which had raw veggies but still felt cozy, warm and wintery (I know! That’s not a word but you know what I mean.).

So, I took it upon myself to make a perfect winter veggie sandwich and tried making it as flavourful and delicious as I can and still healthy and something I can eat for breakfast time and again. I am happy to tell you that after experimenting a bit, I came up with winter raw veggie sandwich which in my opinion is a treat…crispy from outside which is balanced by the tenderness of the tomatoes and creaminess of the avocado. The lemon juice, black pepper and salt add such a perfect blend of flavour. And obviously upping the nutritional game by adding spinach and carrots. 

I feel like this is also a great lunch box sandwich for both kids and adults because apart from being so delectable, it’s also huge. I mean, just look at the size of the thing! It is very satiating and I promise you will feel full after having this amazing, lip-smacking sandwich.

Cooking time 15 minutes

INGREDIENTS

  • 3 slices of whole wheat bread
  • Half-ripe avocado
  • 2-3 spinach leaves
  • 1 medium-sized carrot
  • Half a tomato
  • 1 tbsp tomato ketchup
  • 2 tbsp of cheddar cheese, grated
  • 1 tsp black pepper, freshly ground
  • Salt to taste
  • 1 tsp lemon juice, freshly squeezed

INSTRUCTIONS

  1. Toast 3 slices of whole wheat bread until browned and crispy. While I’ve dry toasted the bread for extra crunch, please go ahead and apply butter while toasting the bread if that is what you prefer.
  2. In a small bowl, add scooped and mashed avocado, lemon juice, salt and black pepper and mix well. On one of the bread slices spread a hearty amount of avocado mixture.
  3. Add 2-3 spinach leaves and top with a slice of bread. Apply tomato ketchup on the top of the bread.
  4. Sprinkle some cheddar cheese on the top of tomato ketchup. Feel free to use cheese slices instead of grated cheese.
  5. Add grated carrots, salt and black pepper as per taste. Top with some tomato slices and carefully place the third slice of bread on top to complete the sandwich.
